It’s a great Meat Free Monday meal if you’ve had an over indulgent weekend but doesn’t compromise on flavour and texture. It also just happens to be completely vegan.

Mussels with Chorizo, Red Pepper, Samphire and Garlicky Sourdough

Mussels are one of my all time favourite meals and while I love the classic bacon, leek and cider flavour combo, I decided to mix it up and experiment with a chorizo flavoured mussel recipe. With some added samphire for colour, crunch and saltiness, chopped jarred red peppers for sweetness, white wine and plenty of lemon juice for acidity, and toasted almonds for some nuttiness, this is up there with one of my favourite weekend meals. Minimal chopping, maximum flavour, and all in one pan - the dream.

Everyone loves risotto and butternut squash and chorizo is a classic combination. However, with the little twists I have made to my recipe, this is a risotto with a difference. The crispy sage, paprika hazelnuts and amaretti all add texture and more layers of flavour. The crushed amaretti biscuit on top is a classic Italian addition which I personally love. Seared Sesame Tuna with Pea, Avocado and Wasabi Mash, Pickled Ginger and Crispy Shallots

With this recipe I tried to recreate all my favourite flavours of a tuna and avocado sushi roll but in a slightly more refined, elegant dish. This made a lovely light main course but it would also make a great starter for a dinner party in smaller portions. The marinade for the steaks is sooooo tasty - salty, sweet, spicy, sour and sharp all at the same time with lots of deep umami flavours. The pea, avocado and wasabi mash works so well with the tuna, giving a background heat to the whole dish. With some crispy shallots, crushed wasabi peas and some pickled ginger on top for texture and flavour, this is a fresh and zingy recipe which will wake up your tastebuds.

Ultimate Pasta Ragu

This is one of my favourite recipes I have tested lately and one I will return to again and again. I wanted to come up with an ultimate pasta ragu recipe using lamb shoulder which falls apart, slow cooked in a rich sauce flavoured with anchovies, olives, capers, white wine, parmesan and plenty of herbs. Although decadent, by using white wine and chicken stock, this ragu is surprisingly light and not too heavy at all - meaning you can happily eat bowl after bowl (in fact I’d encourage this).
