Cherry, Ricotta and Almond Cake
Since its cherry season I thought it was time to treat myself to a little afternoon baking session. This is my cherry, ricotta and almond cake inspired by versions by some of my favourite foodies Ravneet Gill and Esther Clark. I have a version of a ricotta cake which I turn to time and time again depending on what fruit is in season and it really is a one of my favourite recipes. The ricotta changes the texture of the sponge slightly keeping the cake lovely and moist and so light. It also gives it a light, creamy taste which works so well with the sharp, juicy cherries soaked in a little amaretto. Topped with some flaked almonds and demerara sugar for added crunch, this cake is so easy to whip uo. Served with a dollop of creme fraiche, you have a slice of summer heaven.
Cherry Bakewell Rice Pudding
Who doesn’t love cherry bakewell? And who doesn’t love a rice pudding? This recipe is a marriage made in heaven of these two classic comfort food puddings. Creamy, rich, indulgent rice pudding packed with vanilla topped with a sweet, juicy, almondy spiced cherry compote with crunchy toasted almonds for texture. Simple and delicious.
Cherry & Pistachio Frangipane Tart
The ultimate marriage of two of my favourite flavours - cherry and pistachio. This takes a bit of effort but is so worth it. The perfect dinner party dessert or something sweet to treat yourself. Freezes beautifully and can be prepared ahead. Simply one of my favourite dessert recipes.
Miso, Peanut Butter, Pretzel and Pecan Ice Cream with Rum Cherry Compote
One of my ultimate guilty pleasure desserts which never lasts long in the freezer. This is my favourite type of ice cream - sweet, salty, crunchy, creamy and completely moreish paired with a fruity, warm cherry compote. It would also work well with any fruit you have in your freezer (raspberries, strawbs etc). This is a crowdpleaser of a pud which feels grownup but also a little bit like jelly and ice cream you used to get as a kid.
Cherry Amaretto Frangipane Galette
For me, cherry and almond is the perfect combination and my frangipane galette has everything I want in a pudding - crisp pastry, gooey almond frangipane, sweet fruit, the crunch of nuts and a hint of booze. Serve with vanilla ice cream for the perfect dinner party pudding.
